Try a Sweet Cassava Bread made with Coconut and Raisins


Cassava bread is one of the traditional African breads. It is certainly one you
should try.
Remember, cassava is just another name
for ‘Yucca'. If you're a regular visitor,you know that Yucca root is an African staple.
We’ve already learned how to make cassava with gravy and roast cassava.
Cassava is also served as ‘fufu’ with hot pepper soup.
To make cassava bread, we will use grated cassava mixed with grated coconut. You should be able to find the grated ingredients at the oriental or Spanish store.

Here’s what you’ll need:

3/4 C margarine
3 eggs
2 C sugar
2 C frozen grated cassava (see tips)
1 C frozen grated coconut (see tips)
1 C All-purpose flour (sifted)
1 C milk
2 tsp baking powder
1 tsp salt
1 tsp vanilla
1 C raisins (optional)


Here’s what you do:

Preheat oven to 350 degrees. Grease and flour an 11x8 inch pan or a loaf pan.
Defrost your cassava and coconut at room temperature or use a microwave oven. Transfer margarine, eggs, and sugar to mixing bowl. Mix on low for one minute.
Add remaining ingredients to the bowl. Mix on high for two more minutes, scraping bowl frequently. Pour into greased pan.
Bake 40-45 minutes. Bread is ready when it leaves the sides of the pan and a wooden toothpick stuck in the center comes out clean.
Serve warm for breakfast with fruit and juice.


Baking Tips:
If you are short of time, you can defrost the cassava and coconut by placing the bags in a microwave.
If you live in an area where these are not available, you can buy fresh cassava and coconut and use a blender to grate it yourself.

Jamaica warns of skin bleaching risk
Chemical skin lightening has become so popular among young people in Jamaica that health officials launched a campaign to teach them about the dangers. The campaign, Don’t Kill the Skin, will begin next month. “Skin bleaching has become a fast and risky way for young men and women to become beautiful,” Horace Dalley told a group of children at a Kingston library. The focus will be on products that contain hydroquinone, a substance that reduces the melanin growth in the skin, Dalley said.

Neprosone Gel, Hyprogel, Dermo Gel Plus and Movate Cream are just some of the illegal products used by Jamaicans to bleach their skin which the Ministry of Health will seek to keep off of the street once its “Don’t Kill the Skin” campaign gets underway next month.
Health Minister Horace Dalley said under the islandwide campaign, slated to last for five months, the Standards and Regulations Division will increase its inspection of businesses and individual vendors to confiscate illegal pharmaceutical items. Dr Clive Anderson, consultant dermatologist and venereologist at Nuttall Medical Centre, greets Patricia Eves-McKenzie, a counsellor at the University of Technology, during an Educational Lecture at the Tom Redcam Library in Kingston titled ‘Bleachers Beware’. “If unaddressed, skin bleaching may soon amount to a health crisis of serious proportion, as many dermatologists are already reporting that some patients seek help far too late to reverse the damage already done to the skin,” Dalley said in message read at an educational lecture entitled ‘Bleachers Beware’, at the Tom Redcam Library in Kingston last Thursday. The lecture is also a component of the campaign.
Dalley added that the lecture series and the upcoming public fora are critical to increase awareness about the dangers of skin bleaching and how to identify harmful pharmaceutical products on the market.
“Dermatologists have pointed out that most bleaching creams contain Hydroquinone, a chemical available only by prescription in Europe and closely regulated in the United States,” he said. “. Prolonged use of creams containing Hydroquinone stops the production of melanin, a natural pigment that protects the skin from the sun, as well as increases the likelihood of cancers.” Some of the products used by Jamaicans to bleach their skin that the health ministry says are illegal.
Dr Clive Anderson, consultant dermatologist and venereologist at Nuttall Medical Centre, explained that bleaching the skin attacks the pigment and is the single most destructive act that can be done to the skin. He disclosed that persons use these creams on the entire body, including the genital areas, which may, over time, cause skin cancer.
“When the skin is damaged it does not perform the protective function it is supposed to, so you can easily get an infection,” said Dr Anderson. “It is very worrying, because a lot of persons know that they are doing severe damage to the skin and persist in it. Some of this damage is reversible; a lot of it is not reversible. We need to realise that when we use these products, we are doing our skin immeasurable harm. There is no advantage to lightening our skin colour and at the same time damaging our skin. Beautiful skin really is healthy skin, whatever the colour.”
Dr Anderson also explained that most bleaching creams contain steroids, which absorb into the bloodstream. He said if used by pregnant and nursing women, the creams can sometimes result in retarded growth of the foetus or infant.
Currently, bleaching creams are easily accessible in Jamaica, especially from street vendors in downtown Kingston and Spanish Town.
Valerie Germaine, acting director of the Pharmaceutical and Regulatory Affairs Branch of the Standards and Regulation Division in the Ministry of Health, said these products are not approved by the Ministry of Health as they are in direct breach of the Food and Drug Act.
Germaine said under the Food and Drug Act, sales and distribution of illegal prescription drugs can attract a fine of $60,000 per offence or imprisonment. She also warned that persons found in possession of these illegal products with no means of explaining how they obtained them, are in breach of the Act and can be fined or imprisoned as well.
Last year, the US Food and Drug Administration (FDA) proposed a ban on over-the-counter sales of skin-lightening products, saying possible health risks cannot justify their being sold without a prescription.
Germaine said the ministry has been able to confiscate some of these illegal drugs, which are also sold in wholesales.
“We are currently in the process of tracing the origin of these products with the assistance of the Jamaica Constabulary Force,” she said.
But even as the ministry moves to clamp down on the illegal products, Germaine said persons are also using home remedies to bleach their skin.
“There are several combinations, including curry powder, cornmeal, toothpaste and bleach,” she said. “This is very dangerous.”
And despite the fact that the initial effects of using bleaching cream are normally favourable, Germaine warned that there may be internal adverse effects from using these products.
“Your liver could be damaged and you are not aware,” she said. “While all may seem well for some persons, there are many persons that may be suffering from conditions caused by these products.”
The effects of the use of products containing steroids to bleach the skin include:
. Increased risk in skin cancer
. Thinning of the skin
. Irreversible stretch marks
. Easy bruising and tearing of the skin
. Susceptibility to infection
. Delayed wound healing
. Hyperpigmentation
Hyperpigmentation is where the skin does not return to its original colour after prolonged bleaching but actually becomes darker than what it was in the beginning.

    black is definitely beautiful! i learnt that after 15yrs of bleaching my skin with all manners of steroids. i stopped bleaching 3 months ago and i’m liking the way i look now. sometimes, i get the occasional temptations to lighten some parts, but i overcome them eventually. please do the same.

    CEE,You must stop! Remember that any chemical you use on your skin will harm it and the strong one you are using will eventually cause skin cancer! It will mess up your skin and the side effects will be more problems with your skin until there is no real skin left-then if you have to go for doctors help there will be no skin for him to operate with. Even ordinary face powder contains chemicals which will produce different shades on your face ruining your natural skin color. The best advise always is not to use anything that is not natural on your skin.Dark spots you are talking about where no doubt cause by face powder use etc. so now you you need to look for natural methods like egg yolk mask etc. Go to any site that talks about natural (kitchen) methods to care for your skin. I will look too,BUT STOP USING THAT CHEMICAL ON YOUR SKIN NOW!

    This article is god sent. I dont know if you know that I am working as a licensed esthethician in Washington , DC and I have so many
    African clients that have permenately damaged their skin with bleach.
    A little sun screen every day will take care of uneven skin tones and prevent cancer causing cells from starting. Our Mothers used to say stay out of the sun. This advice is so timely as the sun is our worst enemy for different reasons now. The mantra should be use sun screen not bleach.

    i feel like i am truly blessed to have come into this site and join this conversation. I have used quite a number of skin products in the last couple of months because of pigmentation and blemishes on my skin. These where over the counter products, not containing hydroquinone according to my knowledge. Until a friend gave me a product to use a month ago i have received comments from collegues and friends about how my face is so light in comparison to the rest of my body. Though i stopped using the cream now, the distinction is still there and i feel so embarrassed because throughout my body my skin is so uneven. How can i get an even tone throughout mybody and hopefully reverse the damage on my face even though it’s not so serve?

    20 years ago when i was 15 years old i was made to use Jaribu soap (antiseptic soap with bleaching agents) to clear the acne/pimples and it did. Soon after, my skin was asking for stronger creams to clear the acne/pimples whenever they appeared.
    I leant a healthy lesson recently as i am now a total vegetarian and i do not take any drugs. I use the eight (8) laws of health to heal when i get sick. i.e Natural Remedies: It is called NEW START.

    I discovered that my body reacted severely to drugs taken in so did it with those applied on the skin.
    So i have done away with all sorts of skin treatments and i am home and dry. No acne/pimples. No succumbing to peer pressure and being happy the way i am. I am lucky i haven’t developed “i cam to stay marks” on my face. Actually i look younger that my age.

Yes, the Super Bowl was on fire. As one who is very critical of halftime show performances, I cannot deny that Mrs. Carter brought the energy and attention. All of this led to her releasing her tour dates for the Mrs. Carter Show. As excited as I was to actually buy these tickets, despite the factthat I can expect to see a Pepsi logo on everything, something turned me off.
The poster.If you haven't seen the photographs for Beyonce's new world tour, you probably wouldn't even recognize her. Go on her official Facebook page or website and you will see an image of what looks like a Victorian white woman in the Elizabethan era. Her (prosthetic) blonde hair puffed and extended to reveal a face that is almost as white as snow. Lips red and her skin powdered. This is not the same bronze Beyonce that I saw rocking the stage in an all female band with her darker Destiny's Child counterparts.
I was only left with memories of previous patterns that the multi-Grammy award winning artist had done in previous years in regards to her skin. And I asked myself the question: why, Bey?
Let's not act like this is something new. Over the years, it seems as though Beyonce has gotten lighter as she has gotten older. No, this is not genetics and let's not act pretend her skin color in her first Destiny's Child album cover matches that of her latest album 4.
Whether it is that
highly controversial Revlon advertisement or her own album cover art, Beyonce has consistently been called out on alterations done to her pigments.
What does this say about our society for black women?
It tells me that in 2013, an independent, confident and successful woman of color still struggles to have the confidence to fully embrace the skin she is in. If one of the most powerful women in entertainment feels she has to lighten her skin for projection, what does that say for the rest of us?
Believe it or not, colorism, the stigma associated with skin complexion, has been an ill that has not yet been dissolved by the black community. What was first given to us by slave masters in separating the house slaves from the field ones, has now taken place in how we objectify our women and each other. I cannot begin to count how many rap lyrics point out how fine she is to be a "yellabone" or how, as Kanye put it, "light skin girls and some Kelly Rowlands" to point out how exceptionally attractive dark skin girls have to be to fit the norm of beauty.
This is pretty problematic in many ways. It's first of all self-loathing and unnecessary for today's times. The fact that our nation has an African-American first lady with a complexion that isn't on the lighter side of the spectrum, nor does it try to be, shows a compelling advancement in appreciation for all women of color in many ways.
Furthermore, the only reason why such stigma in our country continues is contributed to our own behavior that is shaped by the influential people of color around us. It devastated me when I saw that Sammy Sosa had lightened his skin
. As successful as he was in a field that was not necessarily fixated on male skin complexion, it saddened me to see him do it. In many ways, it even made me reflect back on the transition of the late great Michael Jackson and what explanations he had for such a more pale white appearance.
And why does all of this matter? Because I grew up hearing stories of young dark black girls getting their faces scrubbed with skin lightening soaps out of their free will. Tales of young women being abandon by their mothers because they were too dark. Visions of parents on the Tyra Showsayingthey will bleach their young black children's skin so that life would be easy for them.
If this is the reality that had more implications back in the early 20th century than it does now, please stop it. Stop trying to explain why you are dating the ebony skin girl. Stop making it seem exceptional that a girl of a darker complexion is actually attractive. Celebrities, stop putting extraneous powders and lighteners on your skin: we all know what you used to look like and we still love you. And people of color: let's not continue to perpetuate an oppressive cycle of self-loathing of our appearance and heritage, we have future presidents and movers and shakers that are in our race looking for more because they can do such.
If this can be accomplished, then perhaps even in our own race we can truly make our lives not be judged by the color of our skin but by the content of our character.

Police were called to keep the crowds at bay after Beyonce and Jay-Z were mobbed in Havana, Cuba.
The celebrity couple were celebrating their fifth wedding anniversary in the island capital when they were surrounded by dozens of well-wishers.
The law enforcement officers arrived at the renowned restaurant La Guarida on Wednesday night.

The famous couple’s bodyguards’ presence outside set the gritty, bustling neighbourhood of Centre Havana abuzz, and a crowd gathered downstairs shouting Beyonce’s name until she went to a balcony and waved.
Waitress Silvia Fernandez said Beyonce toured the eatery and looked at photos of past celebrity clients including Jack Nicholson, Jodie Foster, Danny Glover, Will Smith and James Belushi.
‘She was beautiful, without a drop of makeup, very natural,’ Fernandez said. ‘What happened with the people was incredible.’

Police arrived and made sure she was able to exit without incident.
The 31-year-old singer cut a striking image, with her hair styled into cornrows.
She was wearing a patterned yellow ensemble which showed off her legs while rapper Jay-Z, 43, looked like the quintessential tourist in shorts, a blue T-shirt and hat.

La Guarida staffers showed The Associated Press pictures of the two dining on typical Cuban creole favourites – fish, chicken, black beans and rice – accompanied by their mothers.
The privately run restaurant is famous as the filming location for the hit movie Strawberry and Chocolate, and is a mainstay on Havana’s tourist circuit.
The couple – who married Paris on April 4, 2008 – toured colonial Old Havana wearing dark glasses and were surrounded by bodyguards and excited fans.

Beyonce and Jay-Z declined to speak to reporters, and it was not clear why they travelled to Cuba. State-run website CubaSi called it a tourist trip.

Washington’s 51-year embargo makes it illegal for U.S. citizens to visit Cuba for mere tourism, although tens of thousands of Americans travel there each year on academic, religious, journalistic or cultural exchange visas.
The Obama administration eased many of the restrictions in 2011, but tourists still need a special visa or to be part of an organized tour.

In the past, artists who were challenged by the government have said they visited for cultural purposes.
